Creating Matta Donna Italian restaurant wasn't a crazy idea Wednesday, January 20, 2010 NorthJersey.com BY GENNY ELIAS-WARREN Trained at the French Culinary Institute (FCI) and establishing an Italian restaurant, seems odd, right? Not so, says Ed Joyce, who runs the kitchen and is part owner of the new Matta Donna Italian restaurant in Boonton. Although people associate the FCI with mostly French cuisine, Joyce learned the basics of many cuisines, including Italian. And, Joyce added, when he opened his restaurant, he designed the menu after meals found in Northern Italy, which borders France. The result is caramelized onion and goat cheese pizza, white wine and garlic roasted mussels, citrus tagliatelle tossed with mascarpone cheese, fried risotto balls, and spaghetti carbonara, to name a few. Joyce he has a fondness for pizza and wanted to include it, so he offers pizza with a variety of toppings served with either regular or thin crusts. Read more, click here... |

Matta Donna had its grand opening on October 27 of last year. The restaurant, which had been owned and operated for over 30 years by Freddy and Maria Mastria and was known as Eduardo’s Pizzeria, was bought by the Joyce family. Brothers Edward and Zach Joyce and mother, Barbara, all work in the restaurant. Edward, Barbara, and a close friend of the family, William Whitehouse, who are all classically trained chefs, grace the restaurant with their culinary talents. Zach manages the restaurant.
